If you should find yourself in the store and you spy some black pepper potato chips, shut up and just buy them. And then also buy some smoked salmon, some sour cream, a lemon and some parsley or chives. And then you can make the most AWESOME little bites to go with a nice little (or big) glass of white wine.
Smoked Salmon & Potato Chips – what?

All you do is put little slices of smoked salmon (preferably wild-caught, it will say on the package), onto black pepper potato chips and add a little dollop of sour cream, a dash of lemon zest and a flurry of minced herbage – I used parsley, but chives would be better, I think. You can spritz the salmon with a bit of lemon juice before you assemble if you like. The combination of crispy, crunchy, salty, peppery, creamy, cool, herby, fresh and lemony, all in one bite? Get out! Get one! Drink up, eat up! Cheers!
